I love a good Caribbean fruit cake. This one looks very yummy. I bake a similar cake which is called Caribbean Black Cake. We usually soak the fruit in rum for at least 3 month to up to a year. Than around Christmas we start to bake and every one in the family gets a little cake. By the way golden rum is a mixture between light and dark rum. It has more flavor (body) than light rum, but less than dark rum. Cheers.

PS…the hubby is very picky. He did not grow up eating any ethnic foods (including Italian!). I’m lucky I’ve gotten him to eat a few new foods over the years…still working on curries!
