Not Quite Nigella’s Dairy Free & Gluten Free Buckwheat & Coconut Pancakes

Who doesn’t love pancakes for breakfast?  Particularly appropriate on weekends or during the holidays.  I just made these Gluten and Dairy Free Buckwheat and Coconut Pancakes that I found on the Not Quite Nigella website.  I thought it would be great to try a pancake recipe that is not only gluten free but also dairy free.  Only those with an allergy to eggs won’t be able to eat these!

Lorraine from Not Quite Nigella serves these pancakes with a strawberry jam she makes called Three Day Strawberry Jam because exactly that, it that takes three days to make.  Because we’re not that patient and we wanted our pancakes NOW and because I was given an enormous bottle of maple syrup in my Christmas stocking, we served them with the Canadian import.

  2. I very seldom try recipes from blogs because I can never rememebr where I saw them when I decide that I want to try them out !!! I do remember your chicken balls but haven’t had a chance to try them out yet !

    Having said that, they always make me think “Wow those sound nice” and then “When I have lost some weight I would like to give those a try” !!!!

  11. Always had a fascination with buckwheat pancakes since I read that the artist, Whistler, used to make them for breakfast. Unfortunately breakfast is not my best time in the kitchen. Do make things from blogs though. In the evening.

  12. These look wonderful, but then, Lorraine’s recipes always do. I am a huge, huge fan of her and her Not Quite Nigella Blog. My son lived in France and loves all things Breton especially, often asks for buckwheat dishes when he is home. I haven’t been able to find buckwheat flour here in San Miguel yet, but hopefully soon. I’ll definitely make these when I do.
