Salad Season and Vietnamese Lemongrass Beef Salad

Today I’m guest posting over at The Life of Clare.

A few days ago we had a horrible cold snap that plummeted temperatures down around the 10 degree mark (50F).ย  Today it was 35C (95F) and I definitely know what I prefer.

When the weather is this lovely, we like to eat salads.ย  Here is a family favourite of ours:ย  A Vietnamese Lemongrass Beef Salad that is so refreshing it’s perfect for balmy evenings or lunch with the girls.

    What is the coldest temps typically dip? I have no idea. Last night one of the Twin Cities television weather forecasters pulled out his “snowmometer” and predicted 61 inches of snow for the metro this winter. That’s a little above the average, he said. We most definitely need the moisture.

  6. I do not envy the 95 deg temperature. I had my fair share this summer and am so ready for cooler weather. It’s nice and cool here now so we are enjoying the comfort foods now. I love Thai and Vietnamese salads, the sweet, salty, sour balance brings such dimension to their dishes. I love this salad!

  10. Oh yes, absolutely. I would take 35 over 10 any day, but I have to try and reorient my weather happiness right now. And for the next 4-5 months…

  13. I’m enjoying our Fall weather right now but come winter I want my hot weather! And I agree it’s the season for salads. Just like I love a grilled steak salad, I can imagine how tasty and full of flavor this will be. I’ll be stopping by Clair’s for the recipe.

    It’s the opposite season, but we’re having similar weather. Today is crazy warm, but tomorrow will be much cooler. And, I love a good salad on a warm day!

  28. I love salads, too, and our temperatures are like yours right now–the “high” ones, not low. It’s so hot that I am eating lots of fruit and salads, and feel like we’re still in summer mode. I will come over to Clare’s and see you there! ๐Ÿ™‚

  31. I’m sorry Charlie, I find it hard to be too sympathetic at your “mere” 10 degrees, when it was 4 degrees outside the other evening, haha, but I am glad it’s warmed up again for you now!
