She Knows & Chicken and Barley Stew

She Knows is a women’s blogging site that is all encompassing and includes entertainment, beauty and love, parenting, home and living, food and health and wellness.  She Knows has listed their favourite Top 10 food bloggers and I was honoured and overwhelmed to be included on their list.

Chicken and Barley Stew

I thought I would introduce you to the other female food bloggers included in the Top 10.

  2. Katie from What Katie Ate.  Katie has a cookbook coming out and she is a food writer on Delicious magazine.
  3. The Backwards Chef is a dietician who cooks recipes to suit different allergies and intolerances including vegan, vegetarian, diabetic, wheat-free and gluten-free.
  4. Emma from My Darling Lemon Thyme.  Emma is a professional chef who, when she and her children developed intolerances to gluten and lactose, created a blog to share her recipes for others in the same situation.
  5. Cindy and Michael from Where’s the Beef.  This is a vegetarian blog.
  6. Roy and Liz from Strayed From the Table.  They have over 10 years experience in the food industry and were inspired to start their blog by a love of food and drink.
  7. Frank from A Moment on the Lips.  This is a dessert blog!
  8. Maureen from The Orgasmic Chef.  Maureen is a relatively new blogging friend of mine and she is a fantastic blogger who is very generous and supportive of other bloggers.  One day we are going to dine together at Spirit House on the Sunshine Coast.
  9. Sophie from Stovetop Revolution.  Sophie is a young blogger from Sydney who bribes her friends to eat her food.

Comfort Food

Today the weather turned for the WORSE and we have had very cold temperatures, gale force winds blowing roofs off houses and sheet-rain.  This called for some comfort food and a few days I saw a great dish I was inspired to cook on a great blog, Claire’s, Claire K Creations.

Chicken and Barley Stew

Serves:  5

Degree of Difficulty:  2/5

Cost:  This fed my family for less than $20.00 and there is some left over for lunch boxes tomorrow.

Great on a wet windy night!

Claire cooks this dish in a slow cooker and as the two of us have conversed, I don’t have one.  So I cooked this dish like I would cook a risotto by heating the olive oil in a heavy based saucepan, then adding the onion, garlic, carrot and celery and cooking until tender.  I then added the barley, stirred until combined, threw in the herbs (I used fresh herbs), added the chickened, seasoned, then added the stock.  That’s where the similarity with a risotto ends because instead of stirring until I had an ache in my elbow I put a lid on the saucepan and simmered over a low heat for 40 minutes (checked it after 30 as don’t like to eat burnt food).  I removed the saucepan lid, gave it a good stir, then threw in the chopped parsley.

  7. Thanks for listing all those lovely blogs, I’m going to check them out today. I love barley, but slow cooking the chicken slightly disarms me. I usually toast the barley in a cast iron frying pan before I cook it, it really brings out the nutty flavour.

    I was reading in the paper this morning about the strong winds, terrible weather that is for sure, and a bit of damage as well. 20,000 homes without power due to trees falling on power lines, a very wild storm.

    Your chicken stew looks delicious, and it does look like the perfect recipe now we are into Winter.

    I am sitting here in a Typhoon 8 . I’m not a real happy camper. Its not really cold but would love some great comfort food like your soup. Slight issue no barley and everything is closed. I guess will have to venture out when the weather breaks.
