Remember when my extended family celebrated Mother’s Day with a lunch and there was a wonderful salad of eye fillet of beef on the table and I promised to share with you the recipe?

Well…here it is!

And yes, the photos have been taken with a flash and that’s because I’m limping around very slowly at the moment, to the point where darkness falls before I’ve activated the camera.  As you are aware, I’m in training for a 10km ‘fun run’.  I’ve been training for less than three weeks and I have nine sleeps until the big event.

I’m starting to fear it’s going to be highly competitive.  I wish there was a category for those who haven’t done any running since 1986 but alas, I’m being put in a ‘normal’ category of those between 40 and 49.  That’s slightly unfair because, just quietly, there’s every chance I’m going to be the oldest in my age group.

The most unfit and the oldest.  It’s not looking good.

Added to that are my knees.  Let me tell you about my knees.  I’m practically crippled.  The pain in my knees is such that I’m walking gingerly and with a limp.  Yesterday I phoned my physio advising him of all my pain and suffering and hoping he might suggest I pull out of the race.  ‘You’re fine, Charlie; it’s just the impact and the compression of running on concrete combined with not having run for a long time and then there’s the age factor.  You’ll just have to push through it then come and see me after the race’.

After?

It’s so hard to find a scrap of sympathy.

Anyway, limping back to today’s topic, here’s a fantastic beef salad recipe that screams of summer but is suitable to enjoy at any time of the year.  I served this with crispy potatoes and some steamed green beans (because it’s cold and pouring with rain but in summer I would serve this, still with the potatoes, but with a colourful salad).

A Summer Beef Salad with a cornichon dressing
Ingredients
  • 2 handfuls rocket/arugula
  • 500gms eye fillet of beef/tenderloin
  • 8 cornichons finely chopped
  • 2 large handfuls rocket/arugula
  • 500g (1lb)eye fillet of beef/tenderloin
  • 2 tbspns salted capers, rinsed and drained
  • Rind of 1 lemon
  • 1 tbspn lemon juice
  • 2 tbspns finely chopped basil
  • 2 tbspns finely chopped parsley
  • 1 tbspn dijon mustard
  • 1 crushed clove garlic
  • 4-5 tbspns olive oil
Instructions
  1. Arrange the rocket/arugula on a platter.
  2. Slice the beef into thin slices and place on top of the rocket.
  3. Place remaining ingredients into a jar and shake until well incorporated.
  4. Pour dressing over beef.
  5. Season with salt and pepper

When was the last time you went jogging?  Was it as far back as 1986?

  2. I don’t care for running, it jostles my brain (and bits) too much! But the last time I ran was 1994 and when I got home I discovered I had an unrelated rash that went on and was eventually diagnosed as mono! I do love to power walk though.
    Flash or not, your pics always make me want what your cooking. I’ve got fillet minion on my cottage menu this weekend, but that will change to this beauty for sure. I thought it was a chimichurri sauce but I’m really loving the ingredients (all of which I have on hand, fresh herbs from the garden) in your dressing.
    I’m trying to rate the recipe but my phone won’t allow 5 only 4, and I think it’s a 5 star for sure!❤️

  3. That’s the perfect salad right now for us since it’s still so hot here. I am going to go crazy for the flavors (rocket and beef!) and my husband too since beef is his favorite. =)

  4. Oh Charlie! I would have quit a long time ago. I am the Worst. Runner. Ever. I will run to play tennis or soccer but just to run? No thanks! Your salad, on the other hand, YES please!!

  5. The last time I did any running to speak of was in high-school in 1989. I have done some since then, but not enough to really say I’ve been running or jogging, really. More like flailing my arms whilst attempting to move my lower extremitities at a semi-fast pace…all while hyperventilating. 🙂

  11. I hate running. Period. So you are already a hero. Your poor poor knees, though I do think it’s more the nerves than the knees. You will do fine. But imho, you should take it easy because it is run for fun. What the fun in taking out all the fun from the fun?

  15. I think you should tell Alfie that your physio suggests you stick to swimming from now on, and that while you will happily cheer him on, this race will officially herald your retirement from pounding the pavement. What he doesn’t know won’t hurt him.

  16. I hear you about sympathy! I can knees the size of watermelon and be grabbing on for dear life coming down the stairs, but do I get any help? Sympathy? No. So, I feel for you, I hope your knees get better soon, I know knee pain. I haven’t run since the dark ages, once again my knees. This beef salad is perfect for our summer! It’s getting so hot here already. Ugh, I hate hot.

  20. Oh dear – knee pain is very challenging and especially so if you don’t even want to be running on said knees! It does make a good excuse if you need to take a walking break on the day though…

    I do sympathise with light challenges at this time of year too – and am quite concerned about how I fill photograph anything in British winter. You have still captured this salad beautifully though.

  21. What a delicious and appealing salad. Of course we are going into our warmest months and this is substantial without requiring a lot of energy! Perfect! And I feel so much concern for your knees, Charlie. You need those knees for a long time to come. If I were to be in this race I would be in the “60-70” category, and I think because I have never been a jogger, I can honestly tell you I have zero knee pain…ever! You need those knees for a long time to come, my friend. Treat them with love. 🙂 I wish you well on your wonderful race, and do get a good check-up when you “the race is run” and rest your body.   28. Good luck with your race but I personally wouldn’t do it if you are in pain. I’m glad you posted your beef salad…it is grilling season here and this would be perfect when entertaining friends at the cottage.

  30. Poor you, that sounds awful! I was surprised your dr told you to go after the race, I always think (as a runner) that one should be very careful when it comes to the knees. Hope you are better… delicious looking recipe despite the flash if I may say so!

  32. I sure hope you feel better by the race. Sounds like you’d rather sit and heal right now, which is what you should probably do. At least with meals like this salad you won’t have to worry about putting on extra pounds. This is a great salad and perfect for summer! I always make a steak salad with leftover steak. For the next one, I’ll be making your tasty dressing!

I used to have such terrible knee pain… they’re weirdly shaped too (I’ve got a funny bony bump below each knee-cap, and I even went to have them checked out and got x-rays, and in the end they said there was “nothing weird”, and the pain was probably muscular :(. I don’t think I’d have the courage to go running though… that would just be tempting fate.

    Lovely looking salad – I actually love eating salads in the winter… the crisp freshness makes me always feel so cheery, like spring isn’t so far off!
