I used to have such terrible knee pain… they’re weirdly shaped too (I’ve got a funny bony bump below each knee-cap, and I even went to have them checked out and got x-rays, and in the end they said there was “nothing weird”, and the pain was probably muscular :(. I don’t think I’d have the courage to go running though… that would just be tempting fate.

Lovely looking salad – I actually love eating salads in the winter… the crisp freshness makes me always feel so cheery, like spring isn’t so far off!

Good lordy woman, you are impressive… Far out, I can believe you are running even though you are practically crippled. You are my inspiration. 🙂 First sign of pain this end, and Im out. Ooops! Thanks Charlie, you’ve totally just given me permission to get on eating the Summer yummies. Im reading all these posts about Summer foods, totally and absolutely craving fresh food, not the slow cooked stuff, I should just make it, turn the heat up and make it. 🙂 Happy Thursday lovely.

I love this salad! I discovered I would rather have beef, instead of chicken. Chicken is boring to me. The thick dressing on top sounds awesome, love all the ingredients combined! Yum, Hugs, Terra

I sure hope you feel better by the race. Sounds like you’d rather sit and heal right now, which is what you should probably do. At least with meals like this salad you won’t have to worry about putting on extra pounds. This is a great salad and perfect for summer! I always make a steak salad with leftover steak. For the next one, I’ll be making your tasty dressing!

Poor you, that sounds awful! I was surprised your dr told you to go after the race, I always think (as a runner) that one should be very careful when it comes to the knees. Hope you are better… delicious looking recipe despite the flash if I may say so!

Good luck with your race but I personally wouldn’t do it if you are in pain. I’m glad you posted your beef salad…it is grilling season here and this would be perfect when entertaining friends at the cottage.
