Triple chocolate cookies with nuts and dried fruit.
Ingredients
  • 250g unsalted butter, chopped
  • ½ cup dark cooking chocolate, chopped
  • 2 cups brown sugar, lightly packed
  • 4 large eggs, lightly beaten
  • 3 cups plain flour, sifted
  • ⅓ cup cocoa, sifted
  • 1 cup chopped walnuts
  • ½ cup chopped roasted hazelnuts
  • ½ cup sultanas
  • ½ cup shredded coconut
  • ½ cup milk chocolate buds
  • ½ cup white chocolate buds
Instructions
  1. Preheat oven to 210C (425F).
  2. Place an ovenproof bowl over a saucepan of simmering water. Add butter and chocolate and stir until melted. Remove from heat.
  3. Add eggs and brown sugar to chocolate mixture and stir well to combine.
  4. Add flour and coconut and mix well.
  5. Add remaining ingredients and stir well to combine.
  6. Place tablespoons of mixture on oven trays lined with baking paper.
  7. Place trays in the oven for 10 minutes.
  8. Remove from heat and cool on a wire rack.
